  • 2.5 cups asparagus sliced (2-inch) ()
  • servings boston lettuce leaves 
  • 12  cherry tomatoes halved
  • cups chicken breast shredded cooked
  • teaspoon curry powder 
  • tablespoons yogurt plain fat-free
  • tablespoons cilantro leaves fresh finely chopped
  • tablespoons green onions thinly sliced
  • teaspoon juice of lemon 
  • 0.3 cup mayonnaise low-fat
  • 0.1 teaspoon pepper 
  • 0.3 cup radishes thinly sliced
  • 0.3 teaspoon salt 
  • 0.5 teaspoon salt

Directions

  1. Combine first 6 ingredients in a small bowl; set aside.
  2. Boil asparagus in water and 1/2 teaspoon salt 2 minutes or until crisp-tender; drain. Plunge into ice water; drain.
  3. Combine asparagus, chicken, radishes, onions, and mayonnaise mixture in a large bowl.
  4. Sprinkle with cilantro, and toss gently. Cover and chill.
  5. Serve over lettuce leaves, and top each serving with 6 tomato halves.
