Ingredients

  • 1.5 cups diagonally cut asparagus (1-inch)
  • 0.1 teaspoon peppercorns black freshly ground
  • ounces chicken breast shredded cooked
  • 0.3 cup flat-leaf parsley fresh finely chopped
  • teaspoons sage fresh chopped
  • 0.3 cup green onions thinly sliced
  • tablespoons milk 1% low-fat
  • 0.7 cup cup heavy whipping cream sour low-fat
  • cups salad greens mixed
  • 0.3 cup radishes thinly sliced
  • 0.3 teaspoon salt 
  • cup zucchini chopped

Directions

  1. To prepare dressing, combine first 4 ingredients, stirring well with a whisk.
  2. To prepare salad, steam the asparagus, covered, for 3 minutes or until crisp-tender. Rinse with cold water, and drain.
  3. Combine asparagus and next 6 ingredients (asparagus through sage) in a large bowl.
  4. Add dressing mixture, tossing gently to coat.
  5. Serve over greens.
