Ingredients

  • 0.3 teaspoon pepper black freshly ground
  • tablespoon dijon mustard 
  • large eggs 
  • 0.3 cup flour all-purpose
  • tablespoons parsley fresh chopped
  •  garlic clove minced
  • servings lemon wedges 
  • tablespoons olive oil divided
  • cup panko bread crumbs (Japanese breadcrumbs)
  • 0.5 teaspoon salt 
  • 24 ounce chicken breast halves boneless skinless

  • plastic wrap
  • baking pan
  • meat tenderizer

Directions

  1. Cut each chicken breast half in half horizontally through thickest portion of each breast half.
  2. Place chicken between 2 sheets of heavy-duty plastic wrap; pound to 1/8-inch thickness using a meat mallet or small heavy skillet.
  3. Sprinkle chicken with salt and pepper.
  4. Place flour in a shallow baking dish.
  5. Combine mustard and egg in another shallow baking dish.
  6. Combine panko, parsley, and garlic in a third shallow baking dish. Dredge pounded chicken in flour; dip in mustard mixture, and dredge in panko mixture, pressing firmly to coat.
  7. Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat.
  8. Add 4 chicken pieces. Cook 3 minutes on each side or until done.
  9. Remove chicken, and keep warm. Repeat with remaining 1 tablespoon oil and chicken.
  10. Serve with lemon wedges.
