Ingredients

  • 0.3 teaspoon peppercorns black crushed
  • 0.3 teaspoon pepper red crushed
  • tablespoon olive oil extravirgin
  • 0.8 ounce mint leaves fresh packed
  •  garlic cloves minced
  • tablespoons juice of lemon fresh
  • teaspoon olive oil 
  • 0.5 teaspoon salt 
  • pound chicken breast boneless skinless cut into 1-inch pieces
  • 0.5 cup water 
  • ounce bread white
  • teaspoons citrus champagne vinegar

Directions

  1. To prepare chicken, combine first 6 ingredients in a large zip-top plastic bag.
  2. Add chicken; seal and marinate in refrigerator 15 minutes, turning bag occasionally.
  3. Remove chicken from bag; discard marinade.
  4. Prepare grill.
  5. Thread chicken pieces onto 6 (8-inch) skewers.
  6. Place skewers on grill rack coated with cooking spray; grill 8 minutes or until chicken is done, turning frequently.
  7. To prepare mint sauce, place bread slices in a food processor, and pulse until coarsely crumbled.
  8. Add mint, olive oil, white wine vinegar, 1/2 teaspoon salt, and 2 garlic cloves; pulse until combined. With processor on, slowly pour water through food chute, and process until smooth and well blended.
