Ingredients

  • pound chicken tenderloins ( 8 large)
  • tablespoons tarragon fresh chopped
  • medium garlic clove peeled
  • slices optional: lemon halved
  • tablespoon juice of lemon fresh
  • 0.3 cup olive oil 
  • 0.5 cup parsley fresh italian chopped
  • tablespoons natural pistachios unsalted
  • 16 inch bell pepper red
  • 16 inch onion red (1/)

Directions

  1. Puree first 5 ingredients in processor.
  2. Add1/4 cup olive oil and blend until slightlycoarse paste forms.
  3. Mix in 2 tablespoonswater. Season with salt and pepper.
  4. Transfer 3 tablespoons pesto to small bowl(for brushing chicken and vegetables);reserve remaining pesto.
  5. Prepare barbecue (medium-high heat).
  6. Brush grill with oil. Thread 1 onion piece,1 bell pepper square, 1 lemon slice half, 1chicken tender (lengthwise), then 1 onionpiece, 1 bell pepper square, and 1 lemonslice half alternately on each of 8 skewers.
  7. Brush vegetables and chicken on skewerswith olive oil, then with 3 tablespoonspesto from small bowl.
  8. Sprinkle skewerswith salt and pepper. Grill until chicken iscooked through and vegetables are slightlysoftened, 6 to 8 minutes per side.
  9. Servewith reserved pesto.
