  • 0.3 teaspoon pepper black
  • tablespoon bottled garlic minced
  • 14.5 ounce canned tomatoes diced undrained canned
  • teaspoons capers 
  • cup parsley fresh chopped
  • 0.3 cup kalamata olives pitted chopped
  • 0.5 teaspoon salt 
  •  chicken thighs boneless skinless
  • teaspoon vegetable oil

  1. Sprinkle chicken with salt and pepper.
  2. Heat oil in a large nonstick skillet over medium-high heat.
  3. Add chicken; cook 4 minutes on each side.
  4. Remove chicken from pan; keep warm.

  6. Add remaining ingredients; scrape pan to loosen browned bits. Return chicken and accumulated juice to pan; reduce heat, and simmer 5 minutes or until chicken is done.
