  •  avocados pitted cut into 1/2-inch chunks
  • cups chicken breast shredded cooked
  • 6-inch corn tortillas 
  • tablespoon juice of lime 
  • oz pepper jack shredded
  • cup refried beans fat-free
  • cups romaine lettuce shredded
  • cup tomato salsa 
  • 0.5 teaspoon salt

  • aluminum foil

Directions

  1. Preheat oven to 400F. Line a baking sheet with heavy-duty foil. Mist both sides of tortillas with cooking spray.
  2. Place on sheet and bake until crisp, about 8 minutes.
  3. Toss avocados with lime juice; season with salt.
  4. Spread some beans on each tortilla, top with chicken and avocado.
  5. Sprinkle with cheese. Return to oven and bake until warmed through, 7 to 10 minutes. Top with lettuce and salsa and serve immediately.
