  • 0.3 cup coarsely carrot shredded
  • teaspoons cashew pieces unsalted chopped
  • cup chicken breast cooked chopped (skinned before cooking and without salt)
  • tablespoons cucumber chopped
  • tablespoon green onions chopped
  • 0.3 cup nonfat mayonnaise 
  • 0.1 teaspoon pepper freshly ground
  • 0.3 cup rice wine vinegar 
  • 0.1 teaspoon salt 
  • teaspoon sugar 
  • 0.3 cup tomatoes seeded chopped

Directions

  1. Combine first 5 ingredients in a small bowl, stirring well with a wire whisk.
  2. Combine cabbage and next 5 ingredients; add mayonnaise mixture, and toss gently.
