Ingredients

  • tablespoons butter 
  • 0.5 cup cashew halves 
  • teaspoon curry powder 
  •  bell pepper green sliced
  •  onion chopped
  •  bell pepper red thinly sliced
  • servings salt and pepper to taste
  • tablespoons sesame oil 
  •  chicken breast halves boneless skinless cut into strips
  • tablespoons vegetable oil 

Equipment

  • frying pan
  • slotted spoon

Directions

  1. In a skillet over medium-high heat, mix butter or margarine and vegetable oil until hot.
  2. Add chicken and saute, stirring often, until the chicken turns white.
  3. Remove with a slotted spoon and set aside.
  4. In the same skillet, saute onion and peppers.
  5. Add the cooked chicken and the cashews and season with salt and pepper, curry powder and sesame oil.
  6. Saute for another 2 minutes and serve.
