Ingredients

  • cup brown rice uncooked
  • 0.5 cup carrots chopped
  • 0.3 cup cashew pieces chopped
  • 14.5 oz chicken broth ready-to-serve canned
  • 0.5 teaspoon ginger 
  • 0.5 cup bell pepper green chopped
  • oz pineapple juice unsweetened undrained canned
  •  chicken breast halves boneless skinless
  • tablespoons teriyaki sauce 

Equipment

  • aluminum foil
  • glass baking pan

Directions

  1. Heat oven to 375F. Spray 12x8-inch (2-quart) glass baking dish with nonstick cooking spray. In sprayed baking dish, combine rice and broth; mix well. Cover with foil.
  2. Bake at 375F. for 45 minutes.
  3. Remove rice from oven; uncover.
  4. Add pineapple with liquid, bell pepper, carrot, cashews and ginger; mix well.
  5. Place chicken over rice mixture; press slightly into rice.
  6. Brush chicken with teriyaki baste and glaze.
  7. Return to oven; bake, uncovered, an additional 30 to 40 minutes or until chicken is fork-tender, its juices run clear, and rice is tender.
