Ingredients

  • inch flat wooden skewers 
  • tablespoon ginger fresh grated
  •  garlic cloves minced
  •  green onions cut into 2-inch lengths
  • 0.5 cup mirin sweet ( rice wine)
  • 0.3 teaspoon pepper dried red crushed
  • pound chicken thighs boneless skinless cut into 1-inch cubes
  • 0.3 cup soya sauce 
  • tablespoons sugar

Directions

  1. Soak skewers in water 30 minutes. Preheat grill to medium-high heat (350 to 400).
  2. Combine mirin and next 5 ingredients in a small saucepan over medium-high heat. Bring to a boil, and cook 10 minutes or until slightly thickened and reduced to about 1/2 cup.
  3. Let cool. Reserve 3 tablespoons glaze.
  4. Thread chicken and green onions evenly onto skewers.
  5. Brush skewers with soy glaze.
  6. Grill skewers 4 to 5 minutes on each side.
  7. Brush with reserved soy glaze before serving.
