  • 15 ounce chickpeas drained canned (garbanzo beans)
  • cup cracked wheat uncooked
  • 0.5 cup flat-leaf parsley chopped
  • cup green onions diagonally sliced
  • 0.1 teaspoon hot sauce 
  • 0.3 cup juice of lemon fresh
  • 1.5 teaspoons lemon rind grated
  • tablespoons olive oil extra-virgin
  • Dash pepper 
  • 6-inch pita bread rounds cut into 4 wedges ()
  • cup plum tomatoes diced
  • 0.5 teaspoon salt 
  • cup water boiling

Directions

  1. Combine bulgur and water in a large bowl. Cover and let stand 30 minutes.
  2. Add the tomato and next 9 ingredients (tomato through chickpeas); stir well. Cover and chill.
  3. Serve with pita bread.
  4. Note: Store remaining pita bread in a zip-top plastic bag.
