  • 0.5 teaspoon butter 
  •  anaheim chile pepper seeded finely chopped
  • 0.3 teaspoon chili powder 
  • 10 ounce kernel corn whole frozen thawed
  • 0.3 teaspoon ground cumin 
  • 0.1 teaspoon pepper 
  • 0.1 teaspoon salt 
  • 1.3 ounces sharp cheddar cheese shredded reduced-fat

Directions

  1. Coat a large skillet with cooking spray.
  2. Place over medium-high heat until hot; add butter, tilting skillet to coat bottom.
  3. Add chile pepper, and cook 3 minutes or until crisp-tender.
  4. Add corn and next 4 ingredients; cook 2 minutes or until thoroughly heated.
  5. Remove from heat, and sprinkle with cheese.
  6. Let stand 2 minutes or until cheese melts.
