Ingredients

  • pounds beef chuck cut into 1/2-inch cubes
  • 0.5 cup beer 
  • 15.5 oz black beans drained and rinsed canned
  • 29 oz tomatoes diced canned
  • tablespoons chili powder 
  • tablespoon cumin 
  • cloves garlic minced
  • ounces ground sausage italian hot
  •  jalapeno seeded finely chopped
  • large onion chopped
  • teaspoons oregano dried
  • teaspoon pepper 
  • 15.5 oz kidney beans dark red drained and rinsed canned
  • teaspoon salt 
  • tablespoons vegetable oil

Directions

  1. Warm oil in a large skillet over high heat. Season beef with salt and pepper. Saut meat until no pink remains, 3 minutes.
  2. Transfer to slow cooker.
  3. Add sausage to skillet; saut until browned, 3 minutes.
  4. Transfer to slow cooker.
  5. Add onion, garlic and jalapeos to skillet; saut for 2 minutes.
  6. Add chili powder, cumin and oregano; saut for 1 minute.
  7. Transfer to slow cooker.
  8. Pour beer into skillet; bring to a boil, stirring.
  9. Pour into slow cooker.
  10. Stir tomatoes and both kinds of beans into slow cooker. Cover and cook on low for 7 hours.
  11. Serve hot, with toppings such as scallions, sour cream and shredded Cheddar.
