  • 14.5 ounce canned tomatoes diced canned
  • 14.5 ounce chicken broth canned
  • 0.3 cup chili powder 
  • tablespoons cilantro leaves fresh minced
  • large garlic cloves minced
  • cups hominy canned drained
  • tablespoons olive oil 
  • large onion cut into medium dice
  • 0.5  bell pepper red stemmed seeded cut into small dice
  • servings salt and pepper to taste
  • cups turkey meat leftover

Directions

  1. Heat oil in a large, deep saute pan over medium-high heat.
  2. Add onion and bell pepper; cook until soft and golden, about 5 minutes.
  3. Add garlic and chili powder; continue to cook until fragrant, 1 to 2 minutes longer.
  4. Add tomatoes, broth and hominy; bring to simmer. Reduce heat to low and simmer, partially covered, about 10 minutes, to blend flavors.
  5. Add turkey, salt and pepper. Simmer until heated through, about 5 minutes. Stir in cilantro.
  6. Serve with tortilla or corn chips if you like.
