  • pound baking potato cubed unpeeled
  • teaspoon chili powder 
  • 0.5 teaspoon olive oil 
  • small onion separated halved thinly sliced
  • 0.5 teaspoon salt 
  • ounces preshredded sharp cheddar cheese reduced-fat

Directions

  1. Arrange potato in a steamer basket over boiling water. Cover and steam 10 minutes or until tender.
  2. Remove from heat.
  3. Coat a large nonstick skillet with cooking spray; add oil.
  4. Place over medium-high heat until hot.
  5. Add onion; saut 3 minutes or until tender.
  6. Add potato, chili powder, and salt. Cook 5 minutes or until potato is lightly browned, stirring often.
  7. Sprinkle cheese over potato. Cover, remove from heat, and let stand 1 minute or until cheese melts.
  8. Serve immediately.
