Ingredients

  •  cherry tomatoes 
  • teaspoon chili powder 
  • cups rice cooked
  • tablespoons cilantro leaves fresh minced
  •  garlic clove minced
  • tablespoon jalapeno minced seeded
  • tablespoons juice of lime fresh
  • teaspoon olive oil 
  • teaspoon oregano dried
  • 0.5 teaspoon pepper 
  • 0.5 teaspoon salt 
  • 12 ounces shrimp

Directions

  1. Peel shrimp, leaving tails intact.
  2. Combine cilantro and next 8 ingredients (cilantro through garlic) in a bowl; stir well.
  3. Add shrimp and tomatoes, tossing to coat. Cover and marinate in refrigerator 1 hour; stir occasionally.
  4. Remove shrimp and tomatoes from bowl; reserve marinade.
  5. Thread shrimp and tomatoes alternately onto 4 (10-inch) skewers. Prepare grill or broiler.
  6. Place kebabs on grill rack or broiler pan coated with cooking spray; cook 3 minutes on each side or until done, basting occasionally with reserved marinade.
  7. Serve kebabs with rice.
