  • tablespoon cider vinegar 
  • cup cucumber english halved thinly sliced
  • 0.5 teaspoon ground coriander 
  • 0.1 teaspoon ground pepper red
  • 0.3 cup pickled watermelon rind marinade 
  • 0.5 cup pickled watermelon rind sliced
  • tablespoon olive oil 
  • 0.3 cup onion red thinly sliced
  • 0.3 teaspoon salt 
  • pound shrimp deveined peeled

Directions

  1. Place first 4 ingredients in a bowl; toss well.
  2. Heat oil in a large nonstick skillet over medium-high heat.
  3. Add shrimp mixture to pan, and cook for 2 minutes on each side or until done.
  4. Remove shrimp from heat; cool 10 minutes.
  5. Combine shrimp, cucumber, and remaining ingredients in a large bowl; toss well. Chill 1 hour.
