Ingredients

  • 0.5 teaspoon chili oil 
  • servings coarse salt and pepper freshly ground to taste
  • 0.3 cup grapeseed oil 
  • tablespoon juice of lime fresh
  • teaspoon lime zest finely grated
  • tablespoon rice vinegar 
  • pound sweet potatoes peeled cut into 3/4-inch pieces

Directions

  1. Bring a large pot of salted water to a boil.
  2. Add sweet potatoes, and return to a boil. Reduce heat, and simmer until tender, about 5 minutes.
  3. Drain.
  4. Whisk vinegar, lime zest and juice, 1 scallion sliced, 1 teaspoon salt and chili oil in a small bowl.
  5. Add grapeseed oil in a slow, steady stream, whisking until emulsified. Season with pepper. Toss dressing with warm sweet potatoes in a large bowl, and garnish with remaining ½ scallion.
  6. Let come to room temperature, then refrigerate until chilled.
  7. Serve cold.
