  • tablespoon butter 
  • cups chicken broth fat-free low-sodium
  • 0.5 cup basil fresh chopped
  • cup green onions chopped
  • cups nonfat buttermilk 
  • 0.1 teaspoon pepper freshly ground
  • 0.5 cup purple onion chopped
  • servings vegetable salsa fresh
  • teaspoon salt 
  • 0.5 cup cup heavy whipping cream light sour
  • pounds zucchini coarsely chopped

Directions

  1. Melt butter in a large skillet over medium-high heat; add purple onion, and saut until tender.
  2. Add zucchini, and saut 10 minutes or until tender. Stir in chopped green onions.
  3. Process sauted vegetables, broth, and next 3 ingredients in batches in a blender until smooth, stopping to scrape down sides. Stir in salt and pepper. Cover and chill. Top each serving with 1/3 cup Fresh Vegetable Salsa.
