Ingredients

  •  egg white 
  • 0.5 tsp chilli flakes 
  • 0.5 tsp curry powder gluten-free (or alternative)
  • 0.5 tsp cayenne pepper 
  • 0.5 tsp ground ginger 
  • tbsp brown sugar soft
  • 350 nuts mixed

Directions

  1. Heat oven to 200C/180C fan/gas
  2. Whisk the egg white briefly to break it up.
  3. Add the spices and sugar, and whisk to combine.
  4. Add the nuts and stir or toss to coat.
  5. Line a baking tray with baking parchment, then pour on the nuts.
  6. Sprinkle with salt to taste. Roast for 10-15 mins. Use a spatula or spoon to break up and toss the nuts halfway through cooking. Leave to cool completely, then break up to serve.
