If you're craving a dish that perfectly balances sweet, savory, and tangy flavors, these Chinese-Hawaiian "Barbecued" Ribs are a must-try. Inspired by the fusion of Asian and island influences, this recipe brings together tender baby back pork ribs glazed in a rich marinade made from soy sauce, ketchup, dry Sherry, fresh ginger, and garlic, creating an irresistible depth of flavor. The ribs are slowly roasted to tender perfection, allowing the sweetness of the sugar to develop into a beautiful, caramelized glaze that clings to every bite.

What makes this recipe even more appealing is how it accommodates dietary preferences—it’s both gluten-free and dairy-free, making it suitable for a variety of eating plans without sacrificing taste. The preparation requires minimal hands-on time with the ribs marinating for at least three hours, or up to a day if you want to build even more flavor ahead of time. The cooking process is straightforward, roasting the ribs low and slow so they become juicy and fall-off-the-bone tender, then finishing with a glossy, browned glaze that adds a perfect touch of barbecue-style richness.

Perfect for lunch or dinner, these ribs serve up hearty satisfaction for six people, making them ideal for family meals or gatherings. With a prep and cook time under an hour (excluding marinating), this recipe is a fantastic choice when you want something flavorful and impressive without spending all day in the kitchen. Dive into these luscious ribs and experience a unique twist on classic barbecue that’s guaranteed to delight your taste buds!

Ingredients

  • pounds baby back pork ribs (3 racks; do not cut apart)
  • 0.3 cup medium-dry sherry
  • inch ginger fresh peeled smashed
  •  garlic clove smashed
  • 0.5 cup catsup
  • teaspoon salt
  • 0.5 cup soya sauce
  • 0.8 cup sugar

Equipment

  • bowl
  • oven
  • roasting pan
  • aluminum foil
  • broiler
  • broiler pan

Directions

  1. Stir together sugar, soy sauce, ketchup, Sherry, and salt in a bowl until sugar is dissolved.
  2. Pour marinade into a roasting pan, then add garlic, ginger, and ribs, turning ribs to coat with marinade. Marinate, covered and chilled, turning occasionally, at least 3 hours.
  3. Preheat oven to 325°F.
  4. Line bottom of a broiler pan with foil, then arrange ribs, rounded sides up, on broiler rack, reserving marinade for basting (discard garlic and ginger). Roast in middle of oven, basting with marinade every 20 minutes (do not baste during last 10 minutes of cooking), until ribs are tender and glaze is well browned, about 1 3/4 hours. Discard any unused marinade.
  5. Let racks stand 5 minutes, then cut into individual ribs.
  6. Ribs can marinate up to 1 day.
