Ingredients

  • 3.5 lb butternut squash 
  • 1  chipotle pepper in adobo sauce canned
  • 0.3 cup firmly cilantro leaves fresh packed
  • 8 oz cream cheese softened
  • 1 tablespoon juice of lime fresh
  • 1.3 teaspoons salt

Directions

  1. Cut each squash lengthwise into 4 pieces; remove and discard seeds. Bring squash and salted water to cover to a boil in a Dutch oven; cook 15 to 18 minutes or until fork-tender.
  2. Drain and let cool 15 minutes. Peel squash, and cut into large pieces.
  3. Process squash, cream cheese, and next 3 ingredients in a food processor 30 seconds to 1 minute or until smooth, stopping to scrape down sides as needed.
  4. Add cilantro, and pulse 5 to 6 times or until cilantro is chopped.
  5. Transfer squash mixture to a microwave-safe bowl. Microwave at HIGH 1 to 2 minutes or until thoroughly heated, stirring at 1-minute intervals.
