Ingredients

  • teaspoons chiles in adobo sauce 
  • medium avocado pitted ripe peeled
  • pounds chicken drummettes (20 to 24)
  • 0.3 cup chili sauce 
  •  chipotles in adobo chopped (from 7-ounce can)
  • 0.3 cup cilantro leaves fresh chopped
  • 0.3 teaspoon garlic powder 
  • 0.1 teaspoon pepper 
  • tablespoons honey 
  • teaspoon juice of lime 
  • tablespoons salad dressing 
  • Dash salt 
  • tablespoon soya sauce 

Equipment

  • frying pan
  • oven
  • aluminum foil

Directions

  1. Mix all ingredients except drummies and Avocado Mayonnaise in shallow dish.
  2. Add drummies; turn to coat. Cover and refrigerate 30 minutes to marinate.
  3. Heat oven to 37
  4. Line jelly roll pan, 15 1/2x10 1/2x1 inch, with aluminum foil. Spray foil with cooking spray.
  5. Remove drummies from marinade; place in pan.
  6. Brush with remaining marinade.
  7. Bake 30 to 35 minutes or until chicken is nolonger pink when centers of thickest pieces are cut.
  8. Meanwhile, make Avocado Mayonnaise.
  9. Serve with warm drummies.
