Ingredients

  • 1.5 cups carrots 1-inch-thick ()
  •  chipotles in adobo canned drained finely chopped
  • 48 ounce fat-skimmed beef broth fat-free canned
  • tablespoons cilantro leaves fresh chopped
  •  garlic clove minced
  • 1.5 teaspoons ground cumin 
  • 43.5 ounce no salt added diced tomatoes diced undrained canned
  • tablespoon olive oil 
  • cups onion chopped
  • cups potatoes - remove skin red cubed peeled (1-inch) ( 1 pound)
  • 0.5 teaspoon salt 
  • pounds chicken breast cut into bite-size pieces
  • 0.3 cup tomato paste

Directions

  1. Place a large Dutch oven coated with cooking spray over medium-high heat.
  2. Add the chicken; saut 7 minutes or until browned.
  3. Remove chicken from pan; keep warm.
  4. Add oil to pan.
  5. Add onion; saut 7 minutes or until lightly browned.
  6. Add garlic; saut 1 minute.
  7. Add potato and the next 6 ingredients (potato through chiles); bring to a boil. Reduce heat, and simmer for 25 minutes or until vegetables are tender.
  8. Add chicken and salt; cover and cook for 10 minutes. Stir in cilantro.
