Ingredients

  • tablespoons apple cider 
  • small apples i use 2 granny smith apples peeled thinly sliced
  • tablespoons honey 
  • 0.3 teaspoon chipotle hot sauce 
  • tablespoons chipotle hot sauce 
  • pound pork tenderloin trimmed
  • teaspoons olive oil 
  • large onion sliced
  • 0.3 teaspoon salt 
  • 15 ounce hoagie rolls

  • kitchen thermometer
  • ziploc bags

Directions

  1. Place pork in a heavy-duty zip-top plastic bag.
  2. Add 2 tablespoons hot sauce, honey, and apple cider. Seal bag, and gently shake to coat. Marinate in refrigerator at least 8 hours.
  3. Drain, reserving marinade.
  4. Heat oil in a large nonstick skillet.
  5. Add onion and apple; saut 6 to 8 minutes or until tender. Stir in 1/4 teaspoon hot sauce and salt.
  6. Prepare grill.
  7. Insert meat thermometer into thickest part of pork.
  8. Place pork on grill rack coated with cooking spray; grill 10 minutes on each side or until thermometer registers 16
  9. Remove from grill, and keep warm.
  10. Boil reserved marinade in a small saucepan 1 minute.
  11. Slice pork thinly, and place on bottom halves of rolls; top evenly with onion mixture and marinade. Cover with top halves of rolls.
