Ingredients

  • teaspoons bottled garlic minced
  • teaspoon brown sugar 
  • teaspoons chipotle chile in adobo chopped
  • 6-inch corn tortillas ()
  • pound pork tenderloins trimmed
  • tablespoon juice of lime fresh
  • 1.5 teaspoons lime rind finely grated
  • 0.3 cup low fat sour cream sour reduced-fat
  • teaspoons olive oil 
  • teaspoons oregano fresh minced
  • 0.3 teaspoon salt 
  • cup shallots thinly sliced

Directions

  1. Place pork tenderloin between 2 sheets of heavy-duty plastic wrap; pound to 1/4-inch thickness using a meat mallet or small heavy skillet.
  2. Remove plastic wrap.
  3. Cut pork into thin strips.
  4. Combine pork, lime rind, and next 6 ingredients (through salt).
  5. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray.
  6. Add shallots to pan; saut for 4 minutes or until tender.
  7. Place shallots in a large bowl.
  8. Add oil to pan.
  9. Add pork; saut for 3 minutes or until no longer pink.
  10. Add pork to shallots.
  11. Warm tortillas according to the package directions. Spoon 1/3 cup pork mixture onto each tortilla, and top each tortilla with 1 1/2 teaspoons sour cream and cilantro. Fold in half.
