  • 12 ounce baking potato 
  • tablespoons chives fresh minced
  • tablespoon olive oil 
  • tablespoons parmesan cheese fresh grated
  • 0.8 teaspoon salt

Directions

  1. Preheat oven to 40
  2. Scrub potato with a brush.
  3. Cut potato lengthwise into very thin slices using a mandoline slicer.
  4. Combine potato slices and oil in a large bowl.
  5. Add cheese, chives, and salt, and toss gently to coat.
  6. Arrange potato slices in a single layer on baking sheets coated with cooking spray.
  7. Bake at 400 for 18 to 20 minutes or until golden.
  8. Note: Chips will brown at different rates. Watch chips carefully, and quickly remove individual chips from the oven as they become golden.
