  • cup chocolate chips 
  • 0.5 cup dutch-processed cocoa powder unsweetened
  • large eggs 
  • cups flour all-purpose
  • teaspoon coffee instant
  • cup brown sugar light packed ()
  • 0.5 cup olive oil extra virgin unsalted for greasing at room temperature (1 stick)
  • 0.5 teaspoon sea salt fine
  • teaspoon vanilla extract pure
  • cups zucchini grated unpeeled for optional garnish

Directions

  1. Preheat the oven to 350°F and grease a 10-inch springform pan with butter or oil.
  2. In a large mixing bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt. In a food processor, process the sugar and butter until creamy (you can also do this by hand, armed with a sturdy spatula).
  3. Add the vanilla, coffee granules, and eggs, mixing well between each addition.
