Imagine delighting your guests with a batch of these stunningly light and airy Chocolate Chip Meringues, a treat that perfectly balances the rich indulgence of chocolate with the delicate sweetness of a classic meringue. What makes this recipe truly special is its impressive ability to cater to every dietary preference on your table; it is naturally gluten-free, dairy-free, and low on the FODMAP scale, making it a safe and enjoyable option for those with specific sensitivities without sacrificing flavor or texture. With a modest preparation time of just 45 minutes and a surprisingly low calorie count of only 37 per serving, you can indulge in these delightful cookies guilt-free while knowing you are providing a nutritious side dish for up to 42 people. The process begins with whipping egg whites and cream of tartar into thick, foamy peaks, which then transform into stiff, shiny mounds once the sugar is gradually incorporated. The magic happens when you gently fold in the almond extract and your choice of finely chopped semisweet chocolate or miniature chips, infusing each bite with a burst of warm, melted chocolate flavor. Baked slowly at a low temperature of 275 degrees, these meringues develop a dry, firm exterior while remaining almost dry inside, creating a perfect snap that shatters into a cloud-like texture. The result is a stunning visual contrast of white, airy peaks dotted with dark chocolate, offering a sophisticated yet simple dessert that feels incredibly homemade. Whether served alongside coffee, tea, or as a standalone sweet, these Chocolate Chip Meringues are sure to become a cherished favorite in your baking repertoire, proving that healthy eating can still be absolutely delicious.

  • 0.7 cup sugar

Equipment

Directions

  1. In a large bowl, with an electric mixer (fitted with whisk attachment) on high speed, beat egg whites and cream of tartar until thick and foamy. Gradually add sugar and continue to beat until mixture holds stiff, shiny peaks. With a spatula, fold in almond extract and chopped chocolate.
  2. Spoon meringue mixture in 1-inch-wide mounds, about 1 inch apart, onto cooking parchment-lined or buttered and floured 12- by 15-inch baking sheets (see notes).
  3. Bake meringues in a 275 oven until dry and firm to touch on the outside and almost dry inside (break one open to test), 30 to 35 minutes; switch pan positions halfway through baking.
  4. Let cool for 5 minutes on sheets, then slide a spatula underneath meringues and transfer to racks to cool completely.
