  • pound andouille sausages spanish halved lengthwise sliced
  • 15 oz canned tomatoes crushed canned
  • 0.3 cup flat-leafed parsley chopped
  •  garlic cloves minced
  • 2.5 cups chicken broth reduced-sodium
  • tbsp olive oil 
  • medium onion chopped fine
  • servings salt 
  • 0.5 pound shrimp shelled deveined per lb.), ; or clams
  • tablespoon tomato paste 
  • ounces coiled fideos

Directions

  1. Heat 2 tbsp. oil in a large wide pot over medium-low heat.
  2. Add onion and cook, covered, until starting to soften, 5 minutes.
  3. Add pasta and more oil if it looks dry, then toast over medium-high heat, turning constantly with tongs, until golden.
  4. Add garlic and saffron (if using), tomatoes and tomato paste, sausages, and broth.
  5. Boil pasta in soup, uncovered, until noodles are tender, about 5 minutes.
  6. Add shrimp and cook just until pink and curled, about 1 minute. Season with salt to taste and stir in parsley.
