Ingredients

  • 10 cups baby spinach 
  • 30 ounce cannellini beans white rinsed canned ( kidney)
  •  garlic clove finely chopped
  • pound ground sausage fresh italian
  • servings pepper freshly ground
  • cups chicken broth low-sodium
  • tablespoons olive oil divided plus more for drizzling
  • large onion thinly sliced
  • sprig thyme leaves

Directions

  1. Heat 1 tablespoon oil in a large skillet over mediumheat.
  2. Add sausage and cook, turningoccasionally, until browned and cookedthrough, 15-20 minutes.
  3. Transfer sausageto a plate.
  4. Reduce heat to medium.
  5. Heat remaining1 tablespoon oil in same skillet.
  6. Add onion, garlic,and thyme sprig. Cook, stirring occasionally,until onion is softened, 5-8 minutes.
  7. Addbeans and broth and cook, crushing a fewbeans with the back of a spoon to thickensauce, until slightly thickened, 8-10 minutes.Season with salt and pepper.
  8. Add spinachby handfuls and cook just until wilted, about2 minutes.
  9. Slice chorizo and fold into stew; addwater to thin, if desired. Divide stew amongbowls; drizzle with oil and sprinkle withpaprika, if desired.
