Ingredients

  •  chorizo sausage cut thick cut into slices
  •  onion red sliced
  •  garlic clove sliced
  • tsp paprika smoked
  • tsp cumin seeds 
  • 400 cherry tomatoes canned
  •  juice of lemon 
  • 400 chickpeas drained canned
  • handful parsley chopped
  • servings sourdough bread toasted

Directions

  1. In a frying pan, fry the chorizo, onion and garlic for 5 mins or until the chorizo is browning on the outside.
  2. Drain the excess oil, then stir in the spices.
  3. Pour in the tomatoes, lemon juice, chickpeas and seasoning. Bubble for 5 mins more to thicken slightly, then sprinkle over the parsley.
  4. Serve with toasted sourdough.
