Ingredients

  • 0.5 cup celery diced
  • cup cucumber diced
  • teaspoon dijon mustard 
  • 0.3 cup basil fresh chopped
  • 0.3 cup parsley fresh chopped
  • 0.3 cup green onions thinly sliced
  • 0.3 cup mayonnaise low-fat
  • 0.1 teaspoon pepper 
  • cups potatoes red cubed
  • teaspoon salt 
  • 0.3 cup cup heavy whipping cream fat-free sour
  • tablespoons relish sweet

Directions

  1. Combine first 6 ingredients in a medium bowl; stir with a whisk.
  2. Place potato and water to cover in a medium saucepan; bring to a boil. Reduce heat, and simmer, partially covered, 8 minutes or until tender; drain and cool slightly.
  3. Add cucumber and remaining 4 ingredients to potato.
  4. Add mayonnaise mixture, and stir gently.
