  • 0.3 cup apple cider 
  • 0.3 teaspoon pepper black
  • 0.8 teaspoon cornstarch 
  • teaspoon dijon mustard 
  • 1.5 teaspoons sage fresh chopped
  • tablespoon heavy whipping cream 
  • pound pork tenderloin trimmed
  • 0.5 cup lower-sodium chicken broth 
  • tablespoon olive oil divided
  • 0.5 teaspoon salt 
  • 0.3 cup shallots finely chopped
  • teaspoons sherry vinegar

Directions

  1. Cut pork crosswise into 12 pieces.
  2. Sprinkle both sides of pork evenly with salt and pepper.
  3. Heat 2 teaspoons oil in a nonstick skillet over medium-high heat.
  4. Add pork; cook 3 minutes on each side or until done.
  5. Remove pork from pan; keep warm.
  6. Add remaining oil, shallots, and chopped sage; cook 2 minutes. Stir in vinegar.
  7. Whisk broth, cider, mustard, and cornstarch.
  8. Add mixture to pan; bring to a boil. Reduce heat; cook 2 minutes, stirring constantly.
  9. Remove from heat. Stir in cream.
