  • cup apple juice divided
  • 0.3 teaspoon pepper black freshly ground
  • tablespoon brown sugar 
  • 0.3 cup cider vinegar 
  • 0.3 teaspoon thyme leaves dried
  • tablespoons parsley fresh chopped
  •  garlic clove minced
  • tablespoon kosher salt 
  • tablespoons soya sauce low-sodium
  • tablespoon olive oil divided
  • 24 ounce center-cut loin pork chops bone-in ( 3/)
  • 0.5 cup shallots sliced

  • ziploc bags

Directions

  1. Combine 1/2 cup apple juice and next 5 ingredients in a large zip-top plastic bag.
  2. Add pork; seal bag, and marinate in refrigerator at least 8 hours, turning bag occasionally.
  3. Remove pork from bag, and discard marinade.
  4. Sprinkle chops with pepper.
  5. Heat 2 teaspoons oil in a large nonstick skillet over medium-high heat.
  6. Add chops to pan; cook 10 minutes on each side or until done.
  7. Place chops on a platter, and cover loosely with foil.
  8. Pour off excess fat from pan.
  9. Add remaining 1 teaspoon oil to pan; heat over medium heat.
  10. Add shallots; saut 3 minutes or until tender.
  11. Add remaining 1/2 cup apple juice and cider vinegar, scraping pan to loosen browned bits; cook 4 minutes or until liquid is reduced by half.
  12. Serve pork chops with sauce.
  13. Sprinkle chops evenly with parsley.
