Ingredients

  • bunch cilantro leaves fresh divided chopped to taste
  • cloves garlic chopped to taste
  • teaspoon juice of lemon to taste
  • teaspoon juice of lime to taste
  • 0.3 cup olive oil 
  •  bell pepper red finely chopped
  • small chile pepper pureed red
  • cups salsa 
  • 1.5 pounds shrimp 
  • 0.8 cup white wine 
  • 0.5  onion yellow chopped

Directions

  1. Toss shrimp and half the cilantro together in a bowl.
  2. Heat olive oil in a skillet over medium heat; saute onion until translucent, 1 to 2 minutes.
  3. Add garlic and saute until browned, 1 to 2 minutes.
  4. Stir salsa, red bell pepper, white wine, red chile pepper puree, lemon juice, and lime juice into onion mixture; bring to a boil. Reduce heat and simmer, 2 to 3 minutes.
  5. Add shrimp to salsa mixture; cook and stir until shrimp are cooked through, about 5 minutes.
  6. Garnish with remaining cilantro and add more lemon or lime juice to taste.
