Ingredients

  • 4.5 oz chiles green chopped canned
  • slices bacon crumbled cooked
  • 0.3 cup cilantro leaves fresh chopped
  •  garlic clove minced
  •  green onions chopped
  • cup mayonnaise light
  • tablespoons juice of lime fresh
  • 0.5 teaspoon pepper 
  • 3.5 pounds potatoes red
  • teaspoons salt divided

Directions

  1. Cook potatoes and 1 teaspoon salt in boiling water to cover in a large Dutch oven 15 minutes or just until fork tender.
  2. Drain and let stand in ice water to cover 15 minutes; drain well.
  3. Cut potatoes into quarters.
  4. Stir together mayonnaise, next 6 ingredients, and remaining 1 teaspoon salt in a large bowl; add potatoes, and toss to coat. Cover and chill at least 1 hour.
  5. Sprinkle evenly with bacon just before serving.
