Ingredients

  • teaspoons baking soda 
  • 10 ounce hershey®'s cinnamon chips 
  •  eggs 
  • cups flour all-purpose
  • teaspoons ground ginger 
  • teaspoons ground nutmeg 
  • 0.5 cup blackstrap molasses light
  • teaspoons salt 
  • 1.5 cups shortening 
  • tablespoons vanilla extract 
  • cup sugar white for decoration

Directions

  1. Preheat oven to 350 degrees F (175 degrees F).
  2. In a large bowl, cream together the shortening and 2 cups sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla and molasses.
  3. Combine the flour, baking soda, salt, nutmeg and ginger; stir into the sugar mixture until well blended.
  4. Mix in cinnamon chips. Dough will be stiff.
  5. Roll into walnut sized balls and roll each ball in remaining sugar.
  6. Place cookies 2 inches apart onto an ungreased cookie sheet and flatten slightly.
  7. Bake for 8 to 10 minutes in the preheated oven, or until tops are crackled.
  8. Let cool on the baking sheet for a few minutes before removing to a wire rack to cool completely.
