Ingredients

  • teaspoon double-acting baking powder 
  • 0.3 teaspoon baking soda 
  • 0.3 cup canola oil 
  •  egg whites 
  • 1.5 cups flour all-purpose
  • 1.5 teaspoons ground cinnamon 
  • 0.5 teaspoon nutmeg 
  • 0.5 cup raisins 
  • 0.5 teaspoon salt 
  • 0.8 cup sugar 
  • 0.3 cup apple sauce unsweetened
  • teaspoon vanilla extract 
  • 1.3 cups zucchini shredded peeled

Directions

  1. In a small bowl, beat the sugar, applesauce, oil, egg whites and vanilla until well blended.
  2. Combine the flour, cinnamon, baking powder, salt, nutmeg and baking soda; gradually beat into sugar mixture. Fold in zucchini and raisins.
  3. Transfer to an 8-in. x 4-in. loaf pan coated with cooking spray.
  4. Bake at 350° for 50-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
