Ingredients

  • servings cherry wood chunks 
  • tablespoon basil fresh chopped
  • tablespoon thyme leaves fresh chopped
  • 0.3 cup honey 
  • pounds shrimp fresh unpeeled
  • slices garnishes: orange thyme sprigs fresh
  • cup orange juice fresh
  • teaspoon orange rind grated
  •  oranges sliced

Directions

  1. Soak wood chunks in water to cover at least 30 minutes.
  2. Devein shrimp, if desired.
  3. Place shrimp in a shallow dish or large heavy-duty zip-top plastic bag. Stir together orange juice and next 4 ingredients; pour over shrimp, stirring to coat. Cover or seal, and chill 1 hour.
  4. Drain, reserving marinade.
  5. Prepare charcoal fire in smoker; let burn 15 to 20 minutes.
  6. Drain chunks, and place on coals.
  7. Place water pan in smoker; add orange slices.
  8. Add water to fill line. Coat rack with cooking spray; place in smoker.
  9. Place shrimp on upper rack; cover with smoker lid. Cook 45 minutes.
  10. Bring marinade to a boil. Reduce heat, and simmer, uncovered, 5 to 7 minutes or until reduced by half.
  11. Serve with shrimp.
  12. Garnish, if desired.
