  • 0.3 cup orange juice fresh
  • 0.5 teaspoon orange rind grated
  • 24 ounce orange roughy fillets 
  • 0.3 teaspoon pepper flakes red crushed
  • 0.3 teaspoon salt

Directions

  1. Arrange fish in a single layer in a 13- x 9-inch baking dish coated with cooking spray.
  2. Combine orange rind and next 4 ingredients in a small bowl, stirring well.
  3. Pour mixture over fish, and bake at 400 for 20 minutes or until fish flakes easily when tested with a fork.
  4. Remove fish from dish with a wide spatula, and place on a serving dish.
  5. Sprinkle fish evenly with green onions.
