Ingredients

  • 0.1 teaspoon pepper black freshly ground
  • teaspoon caraway seeds 
  • large carrots peeled
  • head cabbage green
  • 0.3 teaspoon kosher salt 
  • 0.8 cup mayonnaise 
  • 0.3 cup parsley leaves loosely packed roughly chopped
  • tablespoons red wine vinegar 
  •  scallions light white green thinly sliced
  • 2.5 teaspoons sugar

Directions

  1. In a small bowl, whisk together the mayonnaise, vinegar, salt, pepper, sugar, and caraway seeds. Slice the cabbage in half through the stem end.
  2. Remove and discard the core. Thinly slice the cabbage to create long, thin shreds. Grate the carrots on the large hole of a box grater. In a large bowl, combine the cabbage, carrots, scallions, and parsley.
  3. Add the dressing and toss. Cover and refrigerate for at least 1 hour before serving.
