  • 0.5 teaspoon maple syrup pure
  • tablespoons olive oil extra-virgin
  • 0.3 cup ruby port 
  • large onion red cut into 1/2-inch dice
  • servings salt and pepper freshly ground

Directions

  1. In a medium saucepan, cook the onion in the olive oil over moderate heat, stirring, until softened, about 4 minutes.
  2. Add the cloves, cover and cook over low heat until the onion is deeply caramelized on the bottom, about 12 minutes.
  3. Add the port and cook, stirring, for 1 minute.
  4. Add the maple syrup and remove from the heat.
  5. Remove and discard the cloves. Season the relish with salt and pepper and let cool.
  6. Make Ahead: The relish can be refrigerated for up to 1 week.
