Ingredients

  • cup rice 
  • 0.1 teaspoon pepper black freshly ground
  • 1.5 cups less-sodium chicken broth fat-free
  • 0.3 cup green onions chopped
  • 0.3 teaspoon ground turmeric 
  • 0.3 teaspoon kosher salt 
  • teaspoons olive oil 
  • 0.3 cup coconut or unsweetened flaked
  • 0.5 cup water 
  • cup onion yellow chopped

Directions

  1. Heat oil in a medium sauce- pot over medium-high heat.
  2. Add onion; saut 2 minutes or until tender, stirring constantly.
  3. Add rice and turmeric; saut until rice becomes yellow. Stir in unsweetened coconut.
  4. Add broth and 1/2 cup water; bring to a boil. Reduce heat to low, and season with salt and pepper. Cover and simmer 20 minutes or until tender.
  5. Turn off heat, uncover, and let stand 5 minutes. Fluff with a fork. Stir in green onions, and serve.
