  • tablespoons cocoa powder raw
  • 0.5 cup hazelnuts crushed lightly toasted
  • teaspoon espresso powder instant
  • 1.5 cups medjool dates pitted
  • teaspoon orange zest finely grated
  • 0.5 cup pistachios crushed lightly toasted
  • tablespoons quick-cooking oats shredded unsweetened ()
  • pinch sea salt 
  • 0.3 cup sesame seed lightly toasted
  • 0.5 cup coconut or shredded unsweetened

    1. Purée cacao powder, dates, 3 tablespoonscoconut, and salt in a food processoruntil almost smooth, adding water byteaspoonfuls if too dry and crumbly andcoconut by teaspoonfuls if too wet andsticky.
    2. Add desired flavoring and pulseto combine.
    3. Scoop date purée by the tablespoonfuland roll into 1" balls. DO AHEAD: Can bemade 1 week ahead. Cover and chill.
    4. Roll truffles in desired coatings to cover.
