Ingredients

  • 28 ounce less-sodium chicken broth fat-free canned
  • tablespoons ginger fresh minced peeled
  •  garlic clove minced
  • 0.5 cup green onions sliced ( 4 onions)
  • 13.5 ounce coconut milk light canned
  • tablespoons juice of lime fresh
  • teaspoon lime rind grated
  • tablespoons soya sauce low-sodium
  • 3.5 ounce boil-in-bag rice long-grain uncooked
  • cups meat from a rotisserie chicken shredded cooked

Directions

  1. Cook rice according to package directions, omitting salt and fat.
  2. While rice cooks, bring broth and next 5 ingredients to a boil in a Dutch oven.
  3. Add chicken; reduce heat, and simmer, uncovered, 2 minutes. Stir in cooked rice, green onions, and lime juice. Ladle soup into bowls, and garnish with cilantro, if desired.
