  • cup pecans toasted chopped
  • cup sugar 
  • 1.3 cups coconut or sweetened flaked
  • teaspoon vanilla extract 
  • cup whipping cream

Directions

  1. Combine first 4 ingredients in a medium saucepan; cook over medium heat, stirring constantly, 8 to 10 minutes or until thickened.
  2. Remove from heat, and stir in vanilla. Stir in coconut and pecans, and let cool completely.
