  • 0.5 cup apricot preserves 
  • Tbsp grey poupon dijon mustard 
  •  eggs 
  • cup baker's angel flake coconut 
  • 0.5 tsp pepper sauce hot
  • lb shrimp deveined uncooked peeled
  •  pkt. shake 'n bake extra seasoned coating mix crispy
  •  pkt. shake 'n bake extra seasoned coating mix crispy

Directions

  1. Heat oven to 400F.
  2. Beat egg in shallow bowl.
  3. Combine coconut and coating mix in separate shallow bowl.
  4. Dip shrimp, 1 at a time, in egg, then in coconut mixture, turning to evenly coat each shrimp.
  5. Place on baking sheet sprayed with cooking spray.
  6. Bake 10 to 12 min. or until shrimp are tender. Meanwhile, microwave remaining ingredients in microwaveable bowl on HIGH 30 sec. or until heated through.
  7. Serve shrimp with sauce.
