Ingredients

  • 0.3 cup matchstick-cut carrots 
  • teaspoons sesame seed black
  • ounce chow mein stir-fry noodles (chuka soba)
  • cup haricots verts cut into 2-inch pieces ( 4 ounces)
  • tablespoons commercial ponzu sauce (such as Kikkoman)
  • 0.3 cup onion red chopped
  • tablespoons sesame oil toasted
  • ounces shiitake mushroom caps thinly sliced
  • 0.5 pound shrimp deveined peeled

Directions

  1. Heat a medium nonstick skillet over medium-high heat. Coat pan with cooking spray.
  2. Add shrimp; saut 5 minutes or until done.
  3. Remove from heat.
  4. Cook noodles according to package instructions, omitting salt and fat.
  5. Drain; rinse under cold water.
  6. Drain well.
  7. Combine noodles, haricots verts, mushrooms, onion, carrots, and shrimp in a large bowl.
  8. Combine ponzu and oil in a small bowl, stirring with a whisk.
  9. Add oil mixture to noodle mixture; toss gently to coat noodles.
  10. Add sesame seeds, tossing gently to combine. Cover and chill 45 minutes, stirring occasionally.
